 Kheer Recipe – Traditional Indian Rice Pudding

Kheer is a classic Indian dessert made with rice, milk, sugar, and dry fruits. It's creamy, aromatic, and perfect for festivals, celebrations, or a sweet treat anytime.


Ingredients:

(Serves: 4-5 people)

  • 1/2 cup Basmati rice (or any fragrant rice)
  • 1 liter Full cream milk
  • 1/2 cup Sugar (adjust as per taste)
  • 1/4 tsp Cardamom powder
  • 10-12 Cashews, Almonds & Raisins (chopped)
  • 8-10 Saffron strands (optional, for color & flavor)
  • 1 tbsp Ghee (for roasting nuts, optional)

Instructions:

Step 1: Prepare the Rice

  1. Wash the basmati rice thoroughly under running water.
  2. Soak it in water for 30 minutes to help soften the grains.

Step 2: Boil the Milk

  1. In a deep pan, bring 1 liter of milk to a boil over medium heat.
  2. Stir occasionally to prevent burning at the bottom.

Step 3: Cook the Rice in Milk

  1. Once the milk starts boiling, drain the soaked rice and add it to the milk.
  2. Cook on low flame, stirring frequently to avoid lumps.
  3. Let it simmer for 25-30 minutes until the rice is fully cooked and the milk thickens.

Step 4: Add Sweetness & Flavors

  1. Add sugar, cardamom powder, and saffron strands (if using). Mix well.
  2. Let it cook for 5 more minutes so the flavors blend.

Step 5: Garnish & Serve

  1. In a small pan, heat 1 tbsp ghee and roast the chopped cashews, almonds, and raisins until golden brown.
  2. Add the roasted dry fruits to the kheer and mix gently.

Step 6: Enjoy Your Kheer!

  1. Serve warm for a comforting dessert or chill in the refrigerator for 1-2 hours for a delicious cold kheer.

Tips for the Best Kheer:

✔️ Use full cream milk for a rich and creamy texture.
✔️ Slow cooking is key – the longer it simmers, the tastier it gets!
✔️ For extra flavor, add rose water or kewra water (just a few drops).
✔️ You can also add condensed milk for extra sweetness and creaminess.


Variations:

  • Vermicelli Kheer (Seviyan Kheer) – Replace rice with thin roasted vermicelli.
  • Makhana Kheer – Use lotus seeds (makhana) instead of rice.
  • Coconut Kheer – Add coconut milk and shredded coconut for a South Indian touch.
